Chocolate BEE POLLEN brownies

500g of sweet potatoes (about 2)

150g of ground oats

3 medjool dates

Handful of crushed walnuts

6 tablespoons of raw cacao powder

1 tablespoons of melted coconut oil

½ teaspoon vanilla extract

a pinch of bicarbonate of soda

a pinch of sea salt



Pre-heating the oven to 180C

Peel the sweet potatoes, cut them into chunks and steam them for about 25 minutes, until soft

When ready add them to a food processor with the pitted dates and mix until creamy

Put the remaining ingredients into a bowl, stir well and then add them to the foods processor together with the sweet potato and date paste

Mix all up

Place into a lined baking dish and cook for about 50 minutes

Remove the brownies from the tray and leave them cool completely before adding the raw bee pollen!
