An absolute dream!
These pancakes just melt in the mouth! Get ready to experience and explosion of flavours from the very first bite !
130 ml almond milk or any other milk of choice
1 medium sized banana
100 g rolled oats
2 tsp bicarbonate of soda (aluminium free)
few drops vanilla extract
optional: organic lemon zest
coconut oil to grease the pan
Raw bee pollen
Optional: fresh fruits, coconuts flakes, nuts, seeds, nut butters, etc
- Put the almond milk, banana, oats, bicarbonate of soda, vanilla and the lemon zest in a blender and process until reaching a smooth consistency
- Heat a non-stick pan over a medium heat and grease with a whisper of coconut oil, pour about 2 tbsp of batter into the pan and cook for 1-2 minutes until the base sets and bubbles appear all over the top.
- Flip and cook the other side for a minute.
Wild blueberry sauce:
Use the juice from defrosted blueberries, add raw honey and mix all up. Then incorporate the blueberries into the sauce to make the filling
Soak the pancakes into the sauce, fill them up with blueberries and raw bee pollen!
